My daughter and I spent 4 days at home. This isn't the "norm" for us but I have a good reason. We were toilet training. So to keep myself active along with her, I decided baking would be a great activity to do together. Especially since she received an apron along with baking utensils from her grandmother recently. :-)
My friend Anna, who has her own food truck, gave me the recipe for a healthy cupcake. We made a Banana Applesauce Cupcake! Sanaa and I both enjoyed this hour-long activity; measuring and mixing the ingredients, talking, mostly me answering "why this?" and "why that?", but most of all we had FUN!
Below is the recipe we used. Thanks Anna!! Cake/Cupcakes 3/4 cup soymilk or coconut milk or greek yogurt (I used greek yogurt) 1 tsp apple cider vinegar 1 ripe banana, smashed 1/2 cup applesauce (we made our own) 1/4 cup of coconut oil, melted 1 tsp vanilla
1 1/4 cup flour 2 tsp baking powder 1/2 tsp salt 1/2 tsp cinnamon *otional (we added it)
Preheat oven to 350 degrees F. Mix all wet ingredients together. Sift all dry ingredients together and mix in all wet ingredients. Fill cupcake or cake pan 3/4 full. Bake cupcakes 14-16 mins. Bake cake 20-23 mins. Cool, frost and enjoy!
Toppings Greek yogurt with toasted coconut, nuts and/or fruits.
